As former southwest US residents, finding a fix for good food from south of the border is difficult in western Washington. This place keeps us coming back year after year now for almost 15 years. Food and service were excellent at South at Pybus. Highly recommend starting with the homemade chips and salsa, especially the flour chips with the red salsa. It was super flavorful and you could really taste the fresh garlic. We enjoyed a few great margaritas and split an order of the Spicy Tacos Al Carbon. The tortillas were crusted in a cheese and habanero sauce, so they packed some serious heat (I needed a Modelo to cool things down). Probably some of the best tacos I’ve ever had, but you better like spice. Our waiter Colby was attentive, friendly, cracked jokes, and made excellent menu recommendations.
